2 minute dessert or breakfast

This is a mug cake recipe. I know what you are thinking. I don’t even like mug cakes that use real things like flour and milk. They come out soggy and gross. Why on earth am I still reading this post?

Because you trust me at this point. Mwahahahahaha *cough cough*

Seriously. I have never found a mug cake that I like and maybe I like this one because I am so limited on types of foods, but this is great. It takes about 2 minutes total to make. I have been using them as occasional breakfast muffins. Partly because they taste good and partly because it is faster than making my usual egg.

Don’t expect this to look nice, but do expect it to taste good, be fast and easy to make, and surprisingly filling.

What you need:

1 egg

1 Tbsp almond flour

1 Tbsp coconut flour

½ Tbsp vanilla

1 ½ Tbsp honey

Enjoy Life Chocolate chips to taste

1) beat the egg in a microwaveable mug.

2) add all the other ingredients and mix them well.

3) pop it in the microwave for 1:30. Turn, put in for another 20 seconds.

4) Dessert!

I was surprised that this worked. Also that there is no oil or baking soda. Win Win. I have mixed it up too. Add berries or shredded coconut. Maybe get really crazy and make an Elvis themed one with almond butter, chocolate, and a banana. Or stranger still. Make it savory. Don’t add vanilla or honey, so add salt pepper, chives, veggies. Your imagination (and food allergies) are your only limitations. Go crazy. And if you come up with a great combo I should try let me know! I am always looking for new flavors.

Ah bread. I miss bread but not as much as my husband does. The grains were really the hardest part for him. (It was dairy for me) So this is for him. The best valentine I can give him is bread that tastes and feels like bread.

You will need:

2 cups almond flour

¼ cup flax meal

2 Tbsp coconut flour

½ tsp baking soda

¼ tsp salt

5 eggs

1 Tbsp apple cider vinegar

1 Tbsp safflower oil

1 Tbsp Honey

1) Put dry ingredients in the food processor and blend.

2) Add wet ingredients and blend.

3) Pour into well-oiled mini loaf pans.

4) Bake at 350 degrees for 30 mins.

5) Mmmmm, bread.

Whatever Flavor You Want Crackers

These are great because:

1) It is an actual snack. (Hard to find these days.)

2) It is really versatile. You can season these anyway you feel that day and top them with whatever. It’s the little black dress of my food world.

You will need:

1 ¾ cups of almond flour (nuts.com is the best in my opinion)

½ tsp of salt

1 TBSP oil of your choosing (I use coconut oil)

1 egg

Any seasonings you want. I have made curry and garlic, fresh rosemary, cayenne and honey (I am not putting measurements here because it is really done to taste.)

1) Put all of your dry items in a bowl and mix together.

2) Whisk your egg and oil together

3) Put everything together and mix it until you have dough. It might look a bit crumbly but that is okay. Now using your hands, mush it into a ball.

4) Put your dough ball between two sheets of parchment paper and roll it out thin. Remove the top piece of parchment and cut your crackers into squares. (Or hearts, triangles, Mobius strips…if you make Mobius crackers I would love pictures)

5) Bake at 350 degrees for 12 minutes. Let cool before eating so they will be crunchy…you know, like a cracker.

Either eat them plain or top them off with stuff. The kind of stuff is up to you, if you have a sweet cracker think about almond butter or fruit. For a savory one, mix up a quick bruschetta or anything your little heart desires, maybe the heart of your sworn enemy. It is really up to you.
