Paleo Fudge

Ready for some quick and easy dairy free fudge? I know I am.

What you will need:

  • 1 cup Enjoy Life Chocolate chips
  • 6 Tbsp coconut milk
  • 1 Tbsp coconut oil

Instructions:

  1. Throw everything into a double boiler on medium heat. I don’t have a double boiler so I just use two pots. Water in the bottom one, chocolate in the top one.
  2. Stir continually till melted and smooth.
  3. Pour into mini cupcake wrappers and freeze for 30 minutes.DSCF7427

Maple Pumpkin Seed Clusters

Maple Pumpkin Seed Clusters

I frequently get the munchies for something sweet and crunchy. This fills that spot perfectly and is quick and easy to make.

What You Will Need:

-1 cup pumpkin seeds

-1/4 cup paleo chocolate chips (We use Enjoy Life)

-4 tsp maple syrup

-4 tsp coconut sugar

-1/2 tsp cinnamon

-pinch of salt

Instructions:

  1. In a small bowl mix syrup, coconut sugar, cinnamon, and salt. It should form a loose runny paste.
  2. Stir in pumpkin seeds and chocolate chips. Make sure they are fully coated.
  3. Spoon onto parchment lined baking sheet. I like mine to be bite sized but pick whatever size you want. You can even spread them evenly across the pan to make a pumpkin seed brittle.
  4. Bake at 305 degrees for 12 minutes (time may vary for your oven)
  5. Let cool and harden. In the summer I use the fridge to get it to set faster. I don’t like waiting for my snacks.
  6. Enjoy!

Meringue Cookies

Meringue Cookies

Hmm, I really want to eat a lot of something but I also don’t want to be immense when I am done. I am also not feeling the grocery store today. What do I have?

What you will need:

-2 egg whites

-1/2 cup maple syrup

Instructions:

  1. Add egg whites and maple syrup to a medium size pot over the lowest temperature setting on your stovetop.
  2. Beat eggs with hand mixer until firm peaks form. I start at a low speed and use the whisk attachment. When you see froth turn the speed up to medium.
  3. Spoon out one-inch dollops onto a parchment lined cookie sheet. It normally takes two sheets for me. You will end up with about 64 one inch cookies. (If you want to be fancy use a piping bag instead of a spoon.)
  4. Bake for 2 hours at 200 degrees.
  5. Let cool 30-45 minutes and enjoy. We eat them all the first day. Partly because they get a little sticky throughout the day if it is humid and partly because we can.

Enjoy. If you want to get really weird? Make a bigger circle of meringue and bake it. Then use it as a dessert pizza crust. We have done this with raspberries and chocolate sauce. So good.

Mug Bread

Mug Bread

We love bread here but don’t eat it often because you have to plan ahead a bit for it. It takes a little while to cook and cool. Here our the solution. We had mug cake/muffins, now we have mug bread! As you know by now, my main goal is to keep things super easy and as quick as possible. It is the only way we can make this kind of lifestyle work. So, bread in about 2 ½ minutes.

What you will need:

-1 egg

-1/3 cup almond flour

-1 Tbsp flax meal

-1 Tbsp olive oil

-1/2-1 Tbsp honey (depending on personal sweet preference)

-½ tsp salt

-½ tsp basil

-¼ tsp rosemary

-¼ tsp garlic

  1. beat the egg in a small bowl
  2. put everything else in and stir
  3. grease mug with coconut or olive oil and poor in batter
  4. microwave for 90 seconds (may vary slightly depending on your microwave)
  5. eat tasty tasty warm fresh bread

This is soft and flavorful bread. It works great on its own with some olive oil to dip in, as a side, or even to go with stew and soup and sop up all of that wonderful broth with. Enjoy.

“Cocktails”

Bored with water and tea? Just make it look more fun. It’s easy and makes an evening special.

I know it can also be awkward going to a bar with friends and just ordering water all night. Instead try this. Get the bartender to give you water (or seltzer) with muddled mint leaves and lime. It will look just like a mojito and tastes better than just plain water. I also make this at home with mint from my garden.

Another tastey treat. Brew your herbal tea stronger than usual and pour it over some ice. I got super fancy using a ball shaped ice mold and putting mint leaves and lime in it. (Looks like whiskey to me)

And finally the tastiest of them all in my opinion. This drink is made of Ginger People ginger soother mixed with lemon, water, about a tsp of honey, and a fresh squeezed orange. So good.

Sauteed Cabbage

This is really simple and could make a great side dish. I personally use it as a snack these days. It is quick and filling and I can eat as much of it as I want to. It’s versatile so I can switch seasonings and make it a new thing each time I make it. This is the way I end up making it most of the time. As usual don’t be afraid to switch the seasonings up and make it your own.

What you will need:

-cabbage (I use the precut cabbage slaw from the grocery store because the whole point for me was to find something that I could make quickly with little effort)

-1 TBSP cooking oil (I use either coconut or olive depending on the day and how I feel)

– 1-2 TBSP balsamic vinegar (I use a maple flavored one that gives it a great sweetness)

– Salt and pepper to taste

– Seasonings. Whatever your heart desires. My usual combo is garlic, basil, and turmeric (which I put in everything because of its amazing anti-inflammatory properties)

1) Heat oil in pan over med high heat.

2) Add cabbage and seasonings (not the balsamic though)

3) Cook till tender. Anywhere between 5-10 minutes depending on how crunchy you like your cabbage. Then add balsamic at the end. With about a minute to cook.

4) Done. I make a large batch and then keep it in the fridge and munch on it for a couple of days whenever I feel the need to snack.

Stuffed Jalapenos

Looks like I am just stuffing everything like some crazy turducken inspired dream. Find thing, hollow out thing, stuff something else in the thing, bake. Today, jalapenos. I bet these would also be great on the grill.

What you will need:

-the biggest jalapenos you can find (as many as you are planning on serving. I did four large ones and had filling left over for other meals)

-1 pound ground meat (I used chicken)

-1 avocado

-1 tsp garlic

-1/2 TBSP oregano

-salt and pepper to taste

-cooking fat (I used coconut)

1) Brown your meat with salt, pepper, garlic, and oregano. (Or if you are using leftovers, heat them up)

2) Remove from heat and mix in avocado.

3) Cut tops off the peppers and remove the seeds.

4) Stuff the peppers.

5) Bake at 400 for 10-15 minutes.

Baked Cherry Tomatoes

Tomatoes are extremely heat stable as far as their nutrients go and should actually be eaten cooked at least a little bit. We could all use some extra lycopene.

What you will need:

– Cherry tomatoes

– Olive oil (enough to cover)

– 1 Tbsp Balsamic Vinegar

-3 cloves of fresh garlic

– 1 Tbsp basil

1) Slice tomatoes in half. Peel and chop garlic.

2) Toss in bowl with remaining ingredients.

3) Spread on parchment lined baking sheet. Bake at 350 for 10-15 mins.

Great as a side dish or a snack. 2 of us demolished an entire package on tomatoes in very short order this way.

Fresh Pickles

Sounds like a contradictory right? Last week I needed a snack and didn’t feel like cooking or really putting any effort into it at all. I looked in the fridge and had mini cucumbers. Normally I would mix these with some mayo and be done with it but I didn’t want to make mayo. I looked around some more and this is what I came up with.

What you will need:

-cucumbers (I used 4 mini because I like eating cute little babies, but you can use whatever)

-1/4 cup balsamic vinegar

-2 Tbsp olive oil

-1/2 Tbsp honey

-1/2 Tbsp dill

-1 tsp garlic (or a couple of fresh cloves)

-1/4 tsp salt

-1/8 tsp turmeric (because it is good for you and make a pretty color)

1) Slice your cucumbers.

2) Mix all of your other ingredients together in a bowl and then add the cucumber slices. Either eat immediately or leave in the fridge for an hour or two. (If you can wait that long it is worth it)

Alternate versions

-add summer squashes or other veggies to the mix

-switch up the seasonings to your favorites

-cook them. We mixed a batch of this up and threw it in a frying pan to see what would happen and it was really good. I think we have made this 3 times in the week since I first made it.

I have no idea which season it is but I know it is not pumpkin season…and I don’t care. I want pumpkin bread and I don’t want to have to wait till the fall to have it. I know that we should eat in season but some days you just really want bread made from something with a face…what? Doesn’t everyone carve them before eating them?

What you will need:

1 cup almond flour

1 Tbsp cinnamon

½ tsp ground cloves

½ tsp nutmeg

½ tsp baking soda

¼ tsp salt

3 eggs

½ cup of canned pumpkin (but only because you didn’t want to take the time to give a real pumpkin a face)

3 Tbsp honey

1) Mix your dry ingredients in the food processor.

2) Add your wet ingredients and pulse till you have a nice evenly mixed batter.

3) Pour into mini loaf pans and bake at 350 degrees for 40-50 mins.

I still think it would have been better if you had carved a face on it and hunted it first.
