Mug Bread

We love bread here but don’t eat it often because you have to plan ahead a bit for it. It takes a little while to cook and cool. Here our the solution. We had mug cake/muffins, now we have mug bread! As you know by now, my main goal is to keep things super easy and as quick as possible. It is the only way we can make this kind of lifestyle work. So, bread in about 2 ½ minutes.

What you will need:

-1 egg

-1/3 cup almond flour

-1 Tbsp flax meal

-1 Tbsp olive oil

-1/2-1 Tbsp honey (depending on personal sweet preference)

-½ tsp salt

-½ tsp basil

-¼ tsp rosemary

-¼ tsp garlic

  1. beat the egg in a small bowl
  2. put everything else in and stir
  3. grease mug with coconut or olive oil and poor in batter
  4. microwave for 90 seconds (may vary slightly depending on your microwave)
  5. eat tasty tasty warm fresh bread

This is soft and flavorful bread. It works great on its own with some olive oil to dip in, as a side, or even to go with stew and soup and sop up all of that wonderful broth with. Enjoy.
